Distillation: artisanal, discontinuous method with steam boilers and discontinuous low-grade column; head and tail cutting performed manually at each firing by the Master Distiller.
Aging: Certified. In the same barrels that our winery aged the Brunello di Montalcino wine.
Duration of aging: 18 months certified.
Raw material: softly pressed fresh pomace of Sangiovese Grosso, Brunello di Montalcino, distilled within 48 hours of racking.
Visual test: intense golden.
Olfactory examination: elegant and complex. The perfect balance between the freshness of the young distillate and the notes of acacia honey, vanilla and candied fruit from aging.
Taste test: in the mouth it is intense, warm, refined. The finish is persistent with flavors of hazelnut, licorice, cocoa, cherries in alcohol, raisin.
